Nurturing the Future

Sustaining Growth, Inspiring Learning

The school snack program is one of EI’s most vital protective initiatives. From January to June, 7,000 nutritious meals were served to children across all age groups in the remote communities of  Granada, where food insecurity is a daily reality.

When mealtime arrives, the children line up outside the kitchen, eagerly waiting as Doña Norita, our cook, and her team of student volunteers serve the meals. With plates in hand and a glass of cereal drink or juice, they settle into their seats in the dining room.

Each dish is thoughtfully prepared using balanced ingredients designed to meet the children’s nutritional needs. Items served include: pasta dishes with creamy milk-based sauces, shredded chicken or ground beef, peanut butter sandwiches, valenciana rice (a flavorful mix of rice, chicken, and carrots enriched with soy), enchiladas, gallo pinto (rice and beans), hearty bean soup, sausages, boiled or ranchero-style eggs, and savory stews with ayote or potatoes. On some days, chicken or beef soups round out the menu. Each meal is crafted with care, ensuring a complete and balanced nutritional intake.

But this time isn’t just about eating—it’s about connection. As they enjoy their food, the room fills with chatter and laughter. The children share their adventures, news, and funny stories from the past day, creating a warm atmosphere that fosters a sense of community.

Thanks to you, these meals are more than sustenance—they're moments of care, stability, and celebration in each child's day.

“The snack is important for the children's growth and academic performance. I notice that when they receive the meal, they are more integrated and focused in class.” Ismael R., Spanish Teacher
